Viva la Independencia!

What do you need to celebrate Mexican Independence Day in Copenhagen?

- Frozen Corn Tortillas (1 kg)
- Tomatoes (20)
- Roasted Chicken (1)
- Onions (2)
- Garlic (4 cloves)
- Home Grown Chili (2)
- Fresh Creme (½kg)
- Cheese (Lots)
- Avocados (10)
- Refried Beans (1 can)
- Tortilla Chips (2 bags)
- Beers and Booze (of your choice)
- Experienced & Extraordinary Mexican Chefs (2)

The outcome:

1) Nice dinner for 6. The menu:

~ Enchiladas Suizas (Swiss Enchiladas.. i dont really know why we call them 'Swiss'. My very smart guess its because they contain a loooot of cheese.. and well, they have cheese in Switzerland eh?

~ Guacamole a la secret recipe (somewhat my own particular mix)

~ Frijoles Refritos (Refried beans)

2) Great after party at MexiBar (of course)

3) Very painful sunday

Anyways... Viva Mexico!!

Mushroom Hunting!

It was, surprisingly, a very well spent sunday. Despite all predictions, Morten, Jonas and I managed to get up 'early' and head to a beautiful forrest north of Copenhagen called Rude Skov. The agenda: Mushroom Hunting! And nope, not funky mushrooms, just normal edible ones.

After a couple of hours, and with the support of our nerdy mushroom's book, we were lucky enough to come back home with like 2 kilos of few different kinds of mushrooms. The day's hard work paid off, and we had an excellent gourmet dinner!

You're going to reap..

just what you sow.

And in my case, its not just any random greenery.. its nothing more and nothing less than.. Chilis!

Jonas just got this plant, and in fact, it is a little bit ironic that the first thing ill harvest in my life its chilis! If you know me, you also know that even if im Mexican, chili is not really included in my basic basket.

Anyways, it feels nice to have a plant in the apartment.. lets see how long it survives under our supervision!
